Gluten-free apple crisp

Are you looking for a gluten-free apple crisp without any oats? I know the struggle. All the recipes out there use oats. And a lot of celiacs are avoiding them. So, I created my version of this crumble which is not only gluten-free, but also oat-free and vegan. And surprisingly, it is SO delicious. It tastes somewhat like strudel, but better.

The ingredients for this apple crumble are quite easy and you can change almost all of them. The banana serves as a binder for the crumble. And it also gives sweetness, since there is no sugar. The puffed quinoa can also be puffed rice, puffed millet etc…If you don’t like pine nuts, replace them with walnuts or chopped hazelnuts. Raisins, forget about them if you are not into it. Maple syrup can become honey, or any other syrup/sweetener you like.

Ready in 25 minutes from scratch, this recipe makes the perfect fall dessert. Prepare it as a snack or also for dinner. It is also possible to make it ahead and re-heat for a few minutes when

5 ingredients only for the most healthy and tasty gluten-free apple crisp ever.

Ingredients

  • 1 ripe banana

  • 1 big apple

  • 2 tbsp almond meal

  • 1 cup puffed quinoa (or other puffed grain)

  • a pinch cinnamon powder

  • a pinch ginger powder

  • 1 tbsp pinenuts

  • 1 tbsp raisin

  • 1 tbsp maple syrup

How to

  • Pre-heat the oven to 355°F/180°C.
  • Dice the apple quite small, then season it with 1 tbsp maple syrup, a pinch of cinnamon, a pinch of ginger, 1 tbsp of pine nuts, 1 tbsp of raisins. Mix well and set aside.
  • Smash the banana, then add the almond meal and the puffed quinoa.
  • In two bowls suitable for oven, distribute a bottom layer of apple, then spread the banana dough in crumbles on it.
  • Bake at 355°F/180°C for 18 minutes. Serve hot with plant-based ice-cream on top.
