The gluten-free and vegan galette is a typical French dessert, in my recipe with a gluten-free and egg-free dough with buckwheat flour, rice flour, and a filling of fruits of your choice! It is very similar to a shortcrust pastry, but way faster to prepare. You don’t need a mold because it must have a rustic look. Also for this recipe you will not need butter, but simple neutral oil – it can be light flavored olive oil, avocado or other. Imagine a semi-crunchy and fragrant shell, holding a juicy and soft heart of fruit! A delicacy that is good for breakfast, tea time or with coffee! These healthy vegan galettes are also ideal to carry!

The dough is prepared by hand by mixing everything together. For the dough I used no gums (like xanthan or guar), no eggs and no commercial blends of flours. Once the dough comes together, you are ready to roll it out, stuff it and fold the edges. Your gluten-free galette is ready to go in the oven! From this ingredients amounts you can make only 1 large Galette or 5 single-portion pieces. Depending on your tastes, you can use the seasonal fruit you prefer: strawberries, cherries, apples, kiwis, as well as a mix of berries or fruit.
