Gluten-free + vegan strawberry galette

The gluten-free and vegan galette is a typical French dessert, in my recipe with a gluten-free and egg-free dough with buckwheat flour, rice flour, and a filling of fruits of your choice! It is very similar to a shortcrust pastry, but way faster to prepare. You don’t need a mold because it must have a rustic look. Also for this recipe you will not need butter, but simple neutral oil – it can be light flavored olive oil, avocado or other. Imagine a semi-crunchy and fragrant shell, holding a juicy and soft heart of fruit! A delicacy that is good for breakfast, tea time or with coffee! These healthy vegan galettes are also ideal to carry!

It is a really quick and easy preparation!

The dough is prepared by hand by mixing everything together. For the dough I used no gums (like xanthan or guar), no eggs and no commercial blends of flours. Once the dough comes together, you are ready to roll it out, stuff it and fold the edges. Your gluten-free galette is ready to go in the oven! From this ingredients amounts you can make only 1 large Galette or 5 single-portion pieces. Depending on your tastes, you can use the seasonal fruit you prefer: strawberries, cherries, apples, kiwis, as well as a mix of berries or fruit.

A easy and quick gluten-free version of the French galette, without any dairy, no eggs, no gums.

Ingredients

  • ½ cup rice flour (90 g)

  • ½ cup buckwheat flour (90 g)

  • 2 tbsp potato starch

  • 2 tbsp light flavoured olive oil

  • 6 tbsp cold water (more if needed)

  • ¼ tsp baking powder

  • 2 tbsp sugar (4 if you are a sweet tooth)

  • a pinch of cinnamon

  • 2 cups strawberries or other fruits

  • Optional: sliced almonds

How to

  • Preheat your oven at 355°F/180°C.
  • Cut your fruits in small pieces. Optionally you can add a tbsp of sugar in these as well. Set it apart.
  • Start mixing all the flours in a large bowl (or the stand mixer bowl), with sugar, baking powder and cinnamon. You can use a whisk but even a spoon will do the job.
  • Add the olive oil, mix again and then pour the water slowly while mixing. You should end up with a crumbly texture that you can knead by hand to make it smooth.
  • Roll the dough out immediately between two sheets of baking paper and pour the strawberries in the center. Leave a good amount of dough free from fruits on the edges. Pinch the bottom with a fork.
  • Gently fold the edges of the galette, overlapping them to cover most of the fruits. Don’t worry if it won’t turn out perfect. When working with gluten-free flours, it is normal for the dough to not be perfect and to crumble a little, they are very delicate flours, so it’s normal!
  • Optionally, brush the upside of the edges with some plant based milk, sugar and sliced almonds. This will only get the crust more golden.
  • Bake at 355°F/180°C for 35 min, until the dough is looking golden.
