Gluten free yogurt banana bread

Did the internet need one more vegan gluten free yogurt banana bread recipe? Probably not. But what I know is that I have to search a lot to get a healthy and simple recipe, and this fulfils all the criteria.

Ingredients

  • 3 very ripe bananas (1 is optional to decorate)

  • 250 ml / 1/2 cup plant based yogurt

  • 100 g / 14 tbsp teff flour

  • 100 g / 10 tbsp rice flour

  • 40 g / 4 tbsp brown sugar

  • 10 g / 1 tbsp of baking powder

  • 50 g / ⅓ cup dark chocolate chips

  • 1 vanilla pod (optional)

  • half a tsp of psyllium husk (optional, see notes)

How to

  • Pre heat the oven at 180°C/350°F.
  • Mash well two bananas with a fork.
  • Add the yogurt and the psyllium, and let aside for 5 minutes.
  • Add the flours, the sugar, the baking powder and the vanilla beans if using,
  • At the end add the chocolate chips and mix well.
  • Line with parchment paper a loaf tin of about 11″x4″ (28×11 cm).
  • Optional: Place the last banana cut in half on top of the dough,
  • Bake at 180°C/350°F for 50 minutes. Try with a knife to see if it’s cooked well, otherwise bake for additional 5/10 minutes. This depends on the size of the bananas that could make the dough more or less wet.

Can I use other flours to make this gluten free yogurt banana bread?

Yes you can. This mix of teff and rice (naturally gluten free flours) provides a good balance of whole grains with a neutral flavor. But especially the teff flour can be replaced by buckwheat flour or quinoa flour, if you like a stronger flavour.

Also, the psyllium husk here is optional, the banana bread will be good even without. However, it makes the bread even softer.
