Gluten-free chocolate chip cookies (crunchy!)


This is the perfect recipe if you are looking for crunchy gluten-free chocolate chip cookies. That also happen to be vegan. Including no gums, no eggs and no pre-mixed flours, these cookies come together in 5 minutes.

This gluten-free chocolate chip cookies recipe is very simple and uses only one bowl. All you need is rice flour, teff flour (or buckwheat flour), vegetable oil, plant based milk and lots of chocolate. Therefore it’s very easy to have all the ingredients.

I added pistachios but almonds or walnuts work fine as well. Likewise, also sunflower seeds or flaxseeds give the crunchiness, if you need to go without nuts.

  • 110 g rice flour

  • 120 g teff or buckwheat flour

  • 80 g brown sugar

  • 75 g plant based milk (I used almond)

  • 70 g olive/seeds oil (with a delicate taste)

  • 50 g dark chocolate

  • 50 g pistachio (or other nuts/seeds)

  • 1 tsp baking powder

  • 1 tsp vanilla extract (optional)

  • Salt flakes (optional)

How to

  • Pre-heat the oven to 180°C/355°F.
  • Mix well the flours with the sugar and the baking powder
  • Add the oil, the milk and mix well.
  • Fold in the chocolate chopped in little chunks and the chopped nuts.
  • Once the dough is smooth and firm, take spoons out and line them on a baking sheet lined with parchment paper.
  • Flatten them out with your fingers and gave them a round shape. If you don’t get perfect circles, they will still taste amazing!
  • Optionally, sparkle with some sea salt flakes to enhance the chocolate taste.
  • Bake in the hot oven for 10 to 15 minutes, depending on the size you gave to the cookies. If you have around 20 cookies, it will be more probably 12/13 minutes. Pay attention to when the edges turn golden: that is the sign the cookies are ready!
