Gluten-free quick bagels

I know people will be upset for this 2-ingredients, gluten-free quick bagels recipe. It is not the traditional recipe for bagels of course, but more like a way to bake a bun of bread in a short time. They are perfect to go with your lunch or breakfast, even if last minute. These bagels have a thicker texture than the traditional ones, but they are soft and work well to be sliced and filled.

Tips & replacements

Since there are only two ingredients in this recipe, there are not a lot of variations to suggest here. But you can swap out the almond flour for hazelnut flour, even if the taste will be more intense. As per the yogurt, you can use any sugar-free yogurt. I tested both soy yogurt and dairy greek yogurt, both work fine in the recipe. If you need to omit the baking powder, you can replace it with baking soda or leave it out completely.

Ingredients

  • ½ cup unsweetened soy yogurt (135 g)

  • 2 cups almond flour (220 g)

  • ¼ tsp baking powder

  • pinch salt

  • seeds or everything but the bagel mix (optional)

  • egg wash (vegan or classic, optional)

How to

  • Pre-heat the oven to 355°F/180°F.
  • In a medium bowl mix the yogurt with almond flour, baking powder and salt.
  • Line a baking tray with parchment paper. Take ¼ of the dough and form a ball with your hands. Place it on the baking tray, flatten gently and then dig a hole in the middle (with your finger or the back of a wooden spoon). Repeat for all 4 parts of the dough.
  • Optionally, you can brush the top with some egg wash. Or a simple olive oil will do. Then complete with your favorite toppings: seeds, herbs or others.
  • Bake at 355°F/180°F for 25 minutes. Then bake for additional two minutes with the grill feature, until golden.
