Ingredients

  • 2,5 tsp dry yeast (or 4 tsp fresh yeast)

  • 2 tbsp psyllium husks (25 g)

  • 1 + 1/4 cup rice flour (200 g)

  • 1/2 cup chickpea flour / soy flour (80 g)

  • 2 tbsp tapioca starch (20 g)

  • 1 +3/4 cup lukewarm water (400 g)

  • 1 tsp salt

  • 1 tbsp olive oil

  • tomato sauce

How to

  • First, dissolve the yeast in lukewarm water. If you’re using dry yeast, add half a teaspoon of sugar as well.
    Stir until the yeast dissolves, then add the psyllium husk. Set the mixture aside for 5 minutes to allow it to gel.
  • Next, add the remaining flours and a teaspoon of salt. Knead the mixture into a ball of dough, lightly oil the surface, and place it in a bowl. Let the dough rest in a warm environment (such as a switched-off oven with the light on) for about 4 hours.
  • After the dough has rested, remove it from the oven and preheat the oven to 250°C (480°F).
  • In the meantime, divide the dough into two equal portions. Roll each portion between two sheets of parchment paper until thin, then peel off the top layer of paper. Lightly grease your fingers with a mixture of oil and water, and gently press each calzone crust from the center outward.
  • If using fresh mozzarella, open it with your hands and let it dry a bit on paper towel. Spread your desired tomato sauce (or fresh tomato) on one half of each dough, leaving a border free. Proceed to add your fillings on top of tomatoes.
  • Then flip the other half of the dough, helping yourself with the parchment paper. Make sure the upper and lower border are aligned, and press with your fingers to seal them. Crimp the edges then press with a fork. Poke some holes on top too. Brush gently with olive oil or with a little tomato sauce.
  • Once the oven has reached the correct temperature, bake the calzone for 15 minutes in the lower rack position.
    After this time, the edges should be puffy and starting to golden. Move the calzone to a middle rack and bake for an additional 10 minutes (in the last 3 minutes change the program on grilling setting).
  • Remove from the oven and enjoy right after.
