Ingredients

  • 2 cups 2 baby spinach

  • ½ cup ½ rice flour (140 g)

  • 2 2 eggs

  • ¼ tsp ¼ salt

  • 2 tbsp 2 butter

  • 4-5 leaves 4-5 sauge

How to

  • In a food processor, mix the spinach with the rice flour. Then add the egg and the salt and mix again until you get a smooth and runny batter.
  • Bring a large pot of salted water to boil, then spoon the batter directly into the water, 1 teaspoon at a time.
  • Boil the gnocchi until they float to the surface, then strain them and toss in a bowl with butter and sage leaves.
  • Mix until the butter is melted, then serve as they are to with parmesan and ground pepper.
