Quick and easy Mackerel Spaghetti

This super quick and super easy mackerel spaghetti come together in 15 minutes and make a great last minute meal. They have all the flavors of the traditional Italian seafood pasta thanks to mackerels, olives and capers. Naturally dairy free, this recipe can be also gluten free by swapping regular pasta to gluten free.

For these easy spaghetti you can either use canned mackerels (always good to have in your pantry), or make your own homemade mackerel, like in this recipe of mine.

Ingredients

  • 400 g / 15 oz spaghetti

  • 30 cherry tomatoes or 2 big

  • 300 grams / 7 oz cooked mackerel

  • 20 black olives

  • a small handful of capers

  • extra virgin olive oil

  • garlic

  • salt

  • basil

How to

  • Bring a pot of water to a boil. Use at least 3 liters for 4 people. Add 2 tsp of salt.
  • Meanwhile, bring a large pan over medium-high heat. Add 2 tbsp of oil, 2 cloves of garlic and the cherry tomatoes cut in half. If you use big tomatoes, cut them in cubes before adding to the pan. Continue to cook for about 10 minutes, or until the tomatoes are tender.
  • Once the water is boiling, add spaghetti and cook for two minute less then the package directions.
  • Add the mackerel to the tomatoes pan, along with capers and olives. Let all the flavors come together dor 5 minutes and then remove from heat.
  • Once pasta is almost cooked (2 minutes before the package directions), remove from heat, save 1 cup of the water and then drain.
  • Add the drained pasta to the sauce pan and cook with the tomatoes and mackerel for about 3 minutes, adding some of its starchy water during this time.
  • Serve pasta and top with fresh basil leaves. Adjust salt as needed.

Notes

  • You can use gluten free spaghetti or another shape of pasta if needed.
