Warm squid salad

This warm squid salad with potatoes and tomatoes is really a weekly meal around here during the summer. It comes together quickly in 10 minutes and it is packed with veggies. Most importantly, it tastes like a restaurant meal with a really low effort.

So, the steps of this recipe are easy, quick and straightforward. You will need a large bowl, a pot to boil the potatoes, a pan to grill the squids, and a good knife.

Most importantly, this salad is so tasty you will not believe how healthy it actually is. You can choose to add additional veggies to it, such as cubed grilled zucchini, lettuce or boiled green beans. Also, the amount of ingredients can really vary following your feelings, you can definitely adjust them to your taste.

Ingredients

  • 400 g fresh clean* squid (two medium squids)

  • 2 small potatoes

  • 10 cherry tomatoes

  • a handful of capers

  • 6 leaves of basil

  • extra virgin olive oil

  • salt

How to

  • Bring a pot of salted water to boil. Peel the potatoes and chop them in cubes. Cook them in boiling water for 15 minutes, then strain.
  • While the potatoes are boiling, put a grill pan on high heat. Chop the squids in short pieces (both the tentacles and the head) and grill them on the very hot pan for few minutes (usually 5). You can test with a fork, they have to be tender.
  • In a large bowl, mix together the chopped tomatoes with chopped basil leaves and capers.
  • Once the potatoes and the squids are ready, fold them in the bowl and season with a drizzle of olive oil and salt to your taste.
