Cantaloupe melon salad with feta, almonds and hazelnuts

It is comforting to know that it is not always necessary to cook, to eat something delicious. And I’m not talking about ordering a take away!! Sometimes I just need to eat something fresh, fast, but satisfying at the same time. Everything I am willing do is cut and season.

When the raw ingredients are healthy, seasonal and delicious, that’s all you need: just a pinch of imagination and the combination of flavors creates a hard to resist pleasure.
This salad was born like this, for this precise need. This cantaloupe melon salad is made with refreshing ingredients like cucumber, basil, hazelnut, almonds and feta cheese. I’m in love with the game of texture between nuts and juicy fruits / vegetables, the balance of saltiness and acidity.

It’s a super simple summer side salad idea that’s both sweet and savoury. This recipe is easy, healthy, and gluten-free!

What goes well with cantaloupe melon?

There are a lot of ingredients that taste really well with Cantaloupe melon. The most classic combination is the delicious Italian starter with cured ham and melon (“prosciutto e melone”) . So simple to make but a definite crowd pleaser at a dinner party!

But this Persian melon is also delicious in a simple salad with cherry tomatoes and basil leaves, olive oil, salt. Or with a fresh mozzarella or burrata, amazing pairing!

Ingredients

  • 1 whole ripe cantaloupe melon

  • 1 cucumber

  • 1 block feta cheese

  • ¼ cup roasted hazelnuts

  • ¼ cup roasted almonds

  • 1 tbsp extra virgin olive oil

  • a pinch salt

  • 5-6 basil leaves

How to

  • Clean the melon and cut it into regular pieces.
  • Peel the cucumber and cut it into thin slices, possibly with a mandoline.
  • Chop the nuts and mix everything in a salad bowl.
  • Finish by crumbling the feta on top and adding some basil leaves.
  • Season with olive oil and salt, then serve.
