This surprisingly quick gluten-free focaccia bread is the best option when you do not wish to turn on the oven. The same happens to me too, but still I can’t give up on bread. Especially whenever I’m living on salads and cheese boards, having a side of bread is quite a must.
So here what I came up with today, a focaccia-like type of flatbread that can be cooked on a skillet (or a non-stick pan). This is both vegan and gluten-free, without any gums or commercial blends. I use a dark buckwheat (hence the color), but you can replace it with teff, quinoa or any other flour you have on hand.
The gluten-free focaccia bread recipe is very easy, you just mix everything and cook on a non-stick pan. For the first times you try, I suggest to line it with some parchment paper. The dough doesn’t require any resting time so the focaccia bread can be ready very quickly.
