Quick gluten-free focaccia bread

This surprisingly quick gluten-free focaccia bread is the best option when you do not wish to turn on the oven. The same happens to me too, but still I can’t give up on bread. Especially whenever I’m living on salads and cheese boards, having a side of bread is quite a must

So here what I came up with today, a focaccia-like type of flatbread that can be cooked on a skillet (or a non-stick pan). This is both vegan and gluten-free, without any gums or commercial blends. I use a dark buckwheat (hence the color), but you can replace it with teff, quinoa or any other flour you have on hand.

The gluten-free focaccia bread recipe is very easy, you just mix everything and cook on a non-stick pan. For the first times you try, I suggest to line it with some parchment paper. The dough doesn’t require any resting time so the focaccia bread can be ready very quickly.

Ingredients

  • ½ cup rice flour (90 g)

  • ¼ cup potato starch (30 g)

  • 3 tsp buckwheat flour (10 g)

  • ½ cup cup soy milk (115 g – dairy is ok too)

  • 1 tsp olive oil (5 g)

  • ½ tsp salt (2 g)

  • 1 tsp unsweetened instant baking powder (5 g)

How to

  • Heat a skillet or a non stick pan on low heat.
  • In a bowl mix with a fork or a whisk all the different flours with baking powder, milk, salt and oil. Mix until you have no lumps.
  • Optionally, you can add in chopped herbs or spices to boost the flavor. 
  • Line your pan with parchment paper (you can wet it beforehand if you cook on a gas stove)
  • Pour your batter in a the pan lined with parchment paper, cover and cook on the lowest heat for 20 minutes, then flip it and cook for other 15 minutes.
  • Let it cool on a wire rack for 5 minutes before slicing it.
