What you need to make oat cookies?

  • Oats
  • Ripe bananas
  • Egg
  • Almond butter (or peanut butter)
  • Almond flour
  • Walnuts
  • Raisins
  • Baking powder and salt

You can definitely replace the raisins with chocolate chips or other nuts/dried fruits, following the same amount.

Easy and quick gluten-free, dairy-free banana oat cookies with walnuts and raisins.

Ingredients

  • 1 small banana (100 g)

  • 1 small egg (60 g)

  • 1/3 cup almond butter (70 g)

  • 3 tbs brown sugar (45 g)

  • 1 cup GF oats (105 g)

  • 1/4 cup almond flour (30 g)

  • 1/3 cup crushed walnuts (35 g)

  • 1/3 cup raisins (40 g)

  • 1 tsp baking powder (4 g)

  • a pinch salt

How to

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a mixing bowl, mash the banana and the egg with a fork, then combine sugar and almond butter. Mix until well combined.
  • Add the rolled oats, almond flour, baking powder and salt to the wet mixture. Stir until all the ingredients are incorporated evenly. At last, fold in raisins and chopped walnuts.
  • Using a spoon or an ice cream scoop, drop rounded tablespoons of dough onto the prepared baking sheet. Use the back of the spoon to slightly flatten each cookie as they won’t spread much during baking.
  • Bake the cookies in the preheated oven for 12-14 minutes or until the edges are golden brown.
  • Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely. They will firm up as they cool.
  • Once completely cooled, store the cookies in an airtight container at room temperature for up to a week. These cookies are best enjoyed fresh but can also be frozen..
