These chestnut flour pancakes are a very good choice for breakfast or brunch. The only ingredient is only chestnut flour, so if you have it in your pantry, you are good to go. These healthy pancakes are quite sweet. So for the topping, you can go with chocolate spread, nut butter or jam. But for a bit of contrast, you can have them with bacon, smoked salmon or cream cheese.
Chestnuts are rich in vitamin C, which makes them quite unique among the other nuts. They are also a good source of antioxidants. Plus, chestnuts have a low glycemic index value of 54. As you might know, foods rated lower on the glycemic index cause less major changes to your blood sugar levels.
These ingredients in the recipe are for 4 little pancakes, so if you want more, just double the amount of flour.
