Gluten free crepes with hazelnut cream

Gluten free and Dairy free Crêpes

When it’s time for an afternoon break and your pantry is empty, these gluten free and dairy free crêpes can be a lifesaver. Ready in a few minutes and very easy to make, everybody will go grazy this snack.

The filling can follow your liking: my favorites are with pure hazelnut cream, but also chocolate works wonderfully.

The good thing is that this recipe can be used for savory fillings, too. The sugar in the ingredients is listed as optional. Therefore you can omit it and stuff your crêpes with spinach and mozzarella, or ham and cheese. They can be prepared in advance and grilled in the oven at the last minute.

A simple and quick recipe

Ingredients

  • 2 eggs

  • 180 ml / ¾ cup plant based milk

  • 2 tbsp yogurt (plant based or dairy as well)

  • 40 g / 4 tbsp rice flour

  • Optional: 1 tsp sugar (avoid if using a savory filling)

  • A tsp vegetable oil/butter

How to

  • Mix all the ingredients together in a bowl with a whisk or a fork.
  • Heat a large flat pan on medium/high heat. Melt a few drops of coconut oil/ butter / vegetal oil in the pan. Then with a parchment paper try to spread the grease all over the pan.
  • Once the pan is hot, pour approximately one ladle of batter in the center and rotate the pan to spread the batter and create a circle.
  • After one or two minutes, the crêpe will begin to rise slowly on the borders: at this point you begin to detach it and detach it easily), turn it, leave it a few seconds and remove it.
  • While cooking the following crêpes, store them on a plate putting it in the middle a paper towel.

Possible substitutions

You can replace the yoghurt with more milk. I suggest to mix all the other ingredients to start. Then add 1 or 2 tablespoons of milk until you get the right consistency (a bit more runny than a pancake batter).

Rice flour is ideal here because it has no strong taste but works well to keep the crêpe soft and foldable. Likewise, the same happens with buckwheat flour. I would not advise using any other type of flour.
