Gluten-free apple pancakes

These Gluten-Free Apple Pancakes are a delightful twist on the classic recipe, and they’re totally dairy-free and naturally sweetened, making them ideal for anyone looking to avoid processed sugar. Perfect for breakfast, a snack, or even dessert, these fritters are great to share with the family—kids love them, and they fit perfectly in lunchboxes for a midday treat at school or office!

Made with just a few simple ingredients, these fritters offer a wonderfully light texture thanks to rice flour, while a ripe banana brings natural sweetness and keeps the recipe sugar-free. Add a sprinkle of cinnamon for that comforting fall flavor, a hint of baking powder to fluff things up, and finally, fold in some diced apple for a juicy bite that tastes like a mini apple pie in every pancake! 🍏

With minimal prep, these fritters come together in just 10 minutes and cook up quickly. This means you can make a batch of 10 little pancakes in a flash. Serve them warm with a drizzle of maple syrup, a dusting of cinnamon, or simply enjoy them as-is. Whether you’re gluten-free, dairy-free, or simply craving a nutritious treat that’s naturally sweet, these apple fritters are a fall must-try!

Ingredients

  • 1 ripe banana

  • 1 small apple

  • 1 medium egg

  • ¼ cup rice flour

  • ¼ tsp baking powder

  • 1 tsp cinnamon or pumpkin spice

How to

  • In a medium-sized bowl, mash the ripe banana with a fork until smooth. Crack in the egg and whisk together until fully combined.
  • Add the rice flour, baking powder, and cinnamon to the banana-egg mixture. Stir everything together until you have a smooth batter with no lumps.
  • Take your diced apple and gently fold it into the batter. Make sure the apple pieces are evenly distributed so each fritter gets a bit of apple in every bite.
  • Preheat a non-stick pan over medium heat. If you’d like, add a tiny bit of oil or butter to prevent sticking, but it’s optional.
  • Scoop a small amount of batter (about 1-2 tablespoons) into the pan for each fritter. Flatten it slightly with the back of a spoon to form small pancakes. Cook each fritter for 1-2 minutes on one side, or until golden brown, then carefully flip and cook for another 1-2 minutes on the other side.
