So, I usually use this recipe to get cookies that are high in protein thanks to natural ingredients like greek yogurt, egg whites and almond flour.

Ingredients

  • 2 medium egg whites (¼ cup or 60 g)

  • 3 tbsp sugar or sugar alternative (40 g)

  • ½ cup greek yogurt, plant-based or dairy (110 g)

  • 1+¼ cup almond flour (125 g)

  • ¼ cup chocolate chips (30 g), optional

  • ¼ cup walnuts / peanuts (40 g), optional

  • salt

How to

  • Pre-heat the oven to 355°F/180°C.
  • Whisk the egg whites with sugar until foamy. Then fold in the yogurt and mix again.
  • Stir in almond flour, and mix until just combined to avoid overmixing. Stir in chocolate chips and chopped walnuts.
  • Line a baking sheet with parchment paper and with an ice cream scoop or a spoon shape 6 balls of batter. Sprinkle with salt flakes on top (optional).
  • Bake at 355°F/180°C for 25 minutes , until golden on the edges.
