Naturally gluten-free Shortbread cookies

Welcome to THE perfect recipe of a fool-proof naturally gluten-free shortbread cookies recipe. This recipe involves almonds that give a fine elegant touch to the dough taste. I already made these biscuits for non gluten free people and no one ever notices any difference. Moreover, no gums (such as xanthan) or flour blend are among the ingredients. Actually, most of these ingredients are a staple in every kitchen pantry, and are all naturally gluten-free.

This is a basic recipe that you can customize and adapt to your favorite flavors. Needless to say, these cookies are a great gift for Christmas or birthdays. Or any other time you have to come up with a last minute homemade present.

This same dough of these naturally gluten free shortbread cookies is perfect to make a jam tart (like an Italian Crostata). However, in that case you should use only half of the sugar, and the jam filling will balance the sweetness.

Ingredients

  • 1 stick + 1 tbsp butter (120 g)

  • 1 cup brown sugar (200 g)

  • 1 medium egg

  • 1 cup + ¼ almond flour (120 g)

  • 1 cup + 2 tbsp rice flour (180 g)

  • ¾ cup cornstarch (90 g)

  • 1/4 tsp salt

  • optional: chocolate, icing, almonds, sprinkle…choose your decoration

How to

  • In a large bowl, whip the softened butter with sugar until light and fluffy.
  • Add to the bowl the egg and mix well until the batter is smooth.
  • Fold in all flours and salt and work the dough with hands until you get a homogenous texture.
  • Make a dough ball and let it rest in the fridge for 30 minutes.naturally gluten free shortbread cookies
  • Once the dough has chilled, pre-heat the oven to 170°C / 340°F.
  • Put the dough between two parchment paper sheets and roll it out to a ¼” thickness (5mm). Cut out your favorite shapes and line them on the baking tray.naturally gluten free shortbread cookies
  • Bake at 170°C / 340°F for 30 minutes, then remove from the oven and let them cool on a rack.
  • Once the biscuits are cooled down, decorate them with melted chocolate + chopped almond, salt flakes, pistachio powder etc.

Notes

  • If you cut different shapes and decorate them with different toppings, you can get a wide variety of biscuits with a single dough.

    Would it work if I substituted the butter with avocado oil?

    • No I’m sorry but you need a fat like butter to achieve the right texture. You could use lard instead (only 95 g) or margarine (same amount).
