Ingredients

  • 1 medium egg

  • 2 tbsp peanut butter

  • 1 tbsp brown sugar

  • ½ cup hazelnut or almond flour (55 g)

  • 1 tbsp coconut flour

  • 1 tbsp chocolate chips

  • a pinch salt

How to

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, cream together the peanut butter and brown sugar until well combined. Add the egg to the peanut butter mixture and mix until smooth.
  • Add the dry ingredients (the hazelnut flour, coconut flour, and salt) to the peanut butter mixture and mix until just combined. Then fold in the chocolate chips.
  • Use a cookie scoop or spoon to portion the dough into 8 balls, and place them onto the prepared baking sheet. Use the back of the spoon to press down on each dough ball to flatten them.
  • Bake the cookies for 10-12 minutes, or until golden brown around the edges.
