Quick gluten-free waffles

These quick gluten-free waffles recipe is everything you need on those weekend mornings when there’s nothing left to eat for breakfast, but you still want a little treat. They come together really easily and with few ingredients. These gluten-free waffles are also without butter, without gums, lactose-free and nickel-free. Obviously this is an alternative of the traditional waffle recipe, the soft gauffres that are prepared with fresh or dry yeast and that have to rest for long hours. This is a good option to make for a quick but delicious breakfast.

Homemade waffles are perfect to eat for breakfast or as a snack together with hazelnut cream, peanut butter or homemade jam. Obviously you can vary and enrich them with honey and berries, sliced ​​almonds, vegetable whipped cream and dark chocolate flakes. The best would also be to spread their squared surface with an intense hazelnut spreadable cream suitable for everyone.

Replacements

This recipes use naturally gluten-free flours (rice flour and potato starch), without xhantan gums or commercial blends. However, you can replace the total amount of flours with a premade mix of flours for cakes or baking.
Baking powder can also be replaced by a pinch of baking soda. On the blog you can find also a recipe for a VEGAN version of the waffles and a second one that uses sourdough starter.

Ingredients

  • 1 medium egg

  • 3 tbsp rice / corn oil (40 g)

  • 3 tbsp brown sugar (40 g)

  • cup rice flour (100 g)

  • 2 tbsp potato starch (20 g)

  • ¼ tsp baking powder

  • 2 tbsp milk of choice (soy here)

  • oil or butter the grease the iron

How to

  • Whisk the egg into a bowl, add the sugar and mix well.
  • Add your favorite oil and mix again.
  • Add the rice flour, the potato starch and the baking powder. Finally, add 1 or 2 tablespoons of milk, until you get a pancake-like batter.
  • Grease the waffle iron and let it heat up. Pour a. tablespoon of dough into the middle. Let the waffles cook for about 5 minutes. If you want them to be crunchy, let them cook a few minutes more.
  • Once cooked, dust them with icing sugar and top withe maple syrup and your favorite fruits.
