The most easy and quick fish soup ever might look like a click-bait title, but believe me it isn’t. Stick with me. This fish soup easy recipe is ready in 40 minutes, from the fridge to your table.

I worked on my mother’s fish soup recipe to get an easy way to make a flavorful soup that was worth the most elegant dinner, yet super fast to put together. And this final result, you can believe me, will become your no-brainer recipe for your romantic dinners. You can choose your favourite fish, here I used monkfish for this recipe. But it works well also with cod, bream or sea bass.

Ingredients

  • 150 gr / 0,5 oz of fish filet of choice

  • 100 gr / 1 handful fresh prawns

  • 150 gr / 0,5 oz of clean squids

  • 120 gr / 1,25 cup of cherry tomatoes (or tomato sauce if not in season)

  • half a white onion

  • a clove of garlic

  • 150 ml of dry white wine

  • 150 ml of water

  • extra virgin olive oil, salt, chili, parsley

How to

  • Heat a medium pot with a drizzle of extra virgin olive oil and add the onion finely chopped, the garlic clove and the chili pepper (chili is optional, according to your taste).
  • Add the tomatoes on high heat and after a few minutes add the white wine. Let the alcohol evaporate. Cook on medium heat for 10 minutes, then remove the garlic and blend everything with a mixer.
  • Clean the prawns and chop them in 3 cm sized bites. Make the same size bites out of the fish filet and the squids.Fish, squids and shrimps for soup
  • Add the total amount of water to the tomatoes mix and bring t boiling point, then low the heat to medium.
  • Add the fish filets, then immediately after add the squids and then the prawns, in this order.
  • Add some chopped parsley, cover and cook for 10 minutes.
  • Let the soup rest and cool down for 10 minutes to let the flavors melt together and then serve.

  1. This looks good! The directions don’t mention when to add the water and white wine. At the beginning of step 6? Also when are the tomatoes added? Sautéed with onion and garlic?

    • You are right, I accidentally remove one step from the description! You use the wine to simmer the tomatoes sauté, then add the water after everything’s mixed. I’ve added these details now, thanks for noticing!
